GS1 Standards for Traceability The goal of this course is to prepare you for implementing business processes built on the foundation of GS1 Standards to track and trace food products at the case level for efficiency and safety. This course will introduce and explain key practices used for case-level traceability and provide guidance about how those practices can be implemented by your company, and with your trading partners

To assist fresh food supply chain partners to implement effective traceability programs, this online course offers 11 on-demand modules with step-by-step guidance to:

  • Help improve product visibility from source to consumption
  • Enhance food safety by leveraging unique product identification for quick and precise recalls
  • Improve consumer confidence and operational efficiencies by enabling supply chain visibility

Trading partners, from point of origin to point of consumption, can benefit from the material in this course.

11 Web-based Modules – Learn at your Own Pace and Convenience

The course consist of the following 11 self-paced modules:

Module 1:  GS1 Overview

  • How GS1 Standards make it possible to identify, capture, and share information automatically and accurately about products, business locations, and more

Module 2:  GS1 Standards in Fresh Foods

  • How the GS1 System of Standards can be applied for fresh foods

Module 3:  Knowing Your Risk

  • What risks can be mitigated with the application of unique product identification in various fresh food categories

Module 4:  Identify

  • Use of Global Location Numbers (GLNs), Global Trade Item Numbers (GTINs), and Serial Shipping Container Codes (SSCCs) in traceability

Module 5:  Capture

  • How to capture product data including extended attributes for items moving through the supply chain with GS1-128 barcodes

Module 6:  Share

  • Use and benefits of Global Data Synchronization Network™ (GDSN®), Electronic Data Interchange (EDI), and  Electronic Product Code Information Services (EPCIS) in traceability programs

Module 7:  GS1 Standards for Supply Chain Traceability

  • How GS1 Standards are used to identify, capture, and share product visibility information

Module 8:  Critical Tracking Events (CTEs)*

What business processes and activities should be tracked as part of your traceability program

Module 9:  Key Data Elements (KDEs)*

  • Based on your supply chain role, what key data elements should be used when recording Critical Tracking Events

Module 10:  Call to Action

  • Best practices for establishing and enhancing effective traceability programs

Module 11:  Resource Module

  • Suite of tools and resources to support traceability implementations

* The Institute of Food Technologists (IFT), in its 2009 Traceability (Product Tracing) in Food Systems Technical Report, defined Critical Tracking Events (CTEs) as “those events that must be recorded in order to allow for effective traceability of products in the supply chain;” these are “those instances where product is moved between premises, is transformed, or is otherwise determined to be a point where data capture is necessary to trace a product.” In its report, IFT also identified and recommended Key Data Elements (KDEs), which can be linked to CTEs and used to support product tracing.
